PRINCIPAL DUTIES AND RESPONSIBILITIES
Prepare all meals in accordance with the established menu and follows recipes provided by the Executive Chef.
Serve food portions correctly, producing quantities as directed. Report amount produced and accurately record on the production sheet for cost control and future reference.
Maintain food costs by creatively utilizing leftovers; communicate with Executive Chef and suggest uses for leftovers.
Check at start of shift that all food required to produce menus are on site.
Follow sanitary practices in all areas of food production. Clean all cook-related equipment on an on-going basis throughout the food production process.
Maintain the food inventory in the walk-in cooler. Consistently cover, date and identify all open food or food in production.
Provide input to the Executive Chef on menu selection.
Oversee the operation of the kitchen in the absence of the Executive Chef.
Maintain the highest standards of personal hygiene.
Responsible for promoting an environment that results in resident satisfaction by exhibiting a positive attitude and timely response to resident needs and requests.
Follow department and Orchard Hill Assisted Living policies and procedures and federal, state and local laws and regulations, where applicable.
All other duties as required and consistent with the education and skills required for this position.
SKILLS AND ABILITIES
Working knowledge of the use of a wide variety of equipment related to the food industry, including but not limited to mixers, meat slicer, deep fryers and microwave.
Ability to read, write and understand English.
Demonstrated understanding of cooking fundamentals, including but not limited to stocks, soup, sauté, braise, bake and roast.
Ability to be flexible and work in an environment that promotes teamwork and collaboration.
Excellent verbal communication skills, and the ability to relate in a positive and professional way to a diverse resident and employee population.
Ability to maintain a high level of confidentiality regarding residents, employees, staff and the community.
Demonstrated ability to set priorities, complete assignments in a timely manner while managing multiple duties and responsibilities.
PHYSICAL REQUIREMENTS
Physically able to move 50 lbs. with or without assistance.
Physically able to bend and reach.
Physically able to push and pull equipment and furnishings.
Physically able to stand for long periods of time.
