Club Restaurant Manager
Waterfall Club is a private retreat located minutes away from the Chattahoochee & Nantahala National Forests, Georgia’s tallest mountain peaks, the Appalachian Trail, trophy trout fishing and Class IV rapids. The Club has been modernized and renovated in all areas including the Wellness Center, Grille, Golf Course, and The Lodge, with unique and breathtaking views.
Requirements:
§ Minimum of 2 years’ experience in upscale hotel, private club, or resort.
§ Hospitality driven, “Service with a smile” mentality.
§ Knowledge of JONAS point of sale systems, or similar POS with the ability to instruct and teach others a plus.
§ Weekends, holidays, and varying shifts dictated by the seasonality of business and special events.
§ Working knowledge of Microsoft Office applications with proficiencies shown in Outlook, Excel, Word. InDesign/Photoshop and other Adobe software knowledge is a plus.
§ Ability to work 40+hour weeks
Responsibilities:
1: Directly oversees:
§ One of the Restaurant Outlets; Vista, The Lodge, Waterfall Grille & Sand-trap, or The Overlook. Restaurant’s availability is dictated by seasonality.
§ Cultivation of a hospitable experience for all members.
§ COGS targeting and forecasting.
§ Supervises all FOH staff members pertaining to specific restaurant area.
2: Managerial Coverage:
§ Provides a nurturing & hospitable work environment for all FOH staff.
§ Aids in development, coaching, & training of FOH staff.
§ Check cleanliness and orderliness of the facilities
§ Check bar for stock and cleanliness.
§ Monitor service and food quality during service hours, assist at bars, kitchen, or floor when needed.
§ Check-out side work, cleaning and restocking upon completion of the shift.
§ Check-out servers’ paperwork ensuring accuracy of guest checks before closing out End of Day process.
§ Daily revenue recording through prescribed formats and/or any new formats designed to understand business more closely and ability to forecast labor at appropriate levels.
3: Administration:
§ Work with F&B Director & GM to hire and maintain service and support staff.
§ Directly communicates all information to F&B Director daily.
§ Scheduling for proper staffing levels.
§ Work closely with the F&B Director with liquor/beer/wine inventory.
§ Maintain pars in all areas and place appropriate orders approved by F&B Director
§ Keep Jonas system updated/create training program for new employees.
§ Assist with budgeting of outlets of responsibility.
4: Private Event Execution:
§ Work closely with F&B Director and Events Director to ensure that every detail of a Banquet Event Order (BEO) is planned and executed flawlessly.
§ Implement bar requisition sheets and proper controls/accounting practices for events to ensure revenues, COGS, and expenses are in line with Club targets and BEO.
5: Completion of assignments/projects as requested by supervisor.
