SUMMARY

The Culinary Director ensures proper execution and quality control of the menu. Work closely with ownership to oversee kitchen operations across all Lardo locations. Manage team of Kitchen Managers at each location to ensure daily tasks are completed in a timely and efficient manner.

ESSENTIAL DUTIES & RESPONSIBILITIES

• Quality Control
• Food Costing
• New menu items; costing, sourcing, execution at both commissary and store level
• Planning and execution of offsite events
• Working as KM for sick or vacationing kitchen managers
• Audit and follow up with monthly inventories to be submitted no later than the 3rd of every month
• Purveyor sourcing and cost management
• Managing relationship between commissary and stores
• Assisting in hiring and training of all kitchen staff
• Assisting in scheduling and reduction of labor
• Continuing education and mentoring for KM?s and kitchen staff
• Opening kitchen manager at all future stores
• Product management
• Training all new kitchen managers; inventoy, scheduling ordering, kitchen culture and leadership

MUST HAVES

• 5+ years of cooking on the line in a kitchen
• 1-2 years of multi-restaurant management experience

DESIRED

1-2 years running Fast Casual business with Commissary
